Students Travel to San Luis Obispo for CAMP Conference

Five students and their advisor travelled to San Luis Obispo from Feb. 10-12, 2017 for the California Association of Meat Processor (CAMP) Annual Conference. Rayna Barden, Zach Bauer, Heather Carter, Ivanarae Castro, Patricia Garcia and animal science professor Michael Chao represented CSU, Chico at the gathering of meat industry professionals and educators from throughout the state.

At the conference, students have the opportunity to enter meat products competitions such as jerky, snack sticks, hams, or sausage. The CSU, Chico students entered the Italian sausage collegiate competition against Cal Poly and Fresno State, where they were judged on sausage appearance, evenly distributed ingredients, aroma, and taste. Although they didn’t place in the competition, the team found the conference to be inspiring and rewarding.

“The workshops we attended extended our knowledge of what can be processed to make different types of sausage,” Barden said. “The ability to talk to representatives and students who share our interests in school and career paths made the experience invaluable.”
