My personal favorite of all of the Asian cuisines would have to be that of China.  Chinese take great pride in there cooking.  A great Chinese philosopher Lao Zi once said: "Governing a great nation is much like cooking a small fish."  With this mix of pride and artwork, Chinese food is among the best in the world.
    There are two distinct types of Chinese food, northern and southern.  Northern Chinese food is most famous from Beijing and Shandong.  It tends to be oily, and consists of strong flavors like vinegar and garlic.  The most famous southern Chinese food is Szechuan and Hunan.  It tends to contain chili peppers.  Southern Chinese food emphasizes freshness and tenderness, but may also be a little sweet.
    Throughout China there are customs that go along with eating.  Meals must be taken while seated.  There is an order in which you are allowed to sit down men then women, younger then older.  Food must be eaten with chopsticks and soup must be eaten with a spoon.  I've picked out some good sites to check out for Chinese food.
