Food insecurity is often described as an invisible challenge on college campuses. For many students, it's about more than knowing where their next meal comes from; it's about deciding whether to pay rent, buy textbooks, or stock the fridge. Last semester, five Chico State public health seniors stepped into that gap with a research project that blended compassion, creativity, and evidence-based solutions.
Under the guidance of Assistant Professor Stephanie Machado, the team partnered with Chico State's Basic Needs office and Associated Students Dining Services to launch a six-week pilot program delivering meal kits directly to students most in need. Each kit contained recipes, ingredients, and step-by-step videos, as well as basic cooking tools like spatulas and pans.
