We abuse land because we regard it as a commodity belonging to us. When we see land as community to which we belong, we may begin to use it with love and respect.”

Dining and Food Services
Campus dining services have the daily challenge of providing thousands
of students with cost-effective, healthy, and flavorful meals. A.S.
Food Service on campus uses primarily disposable products,
but there is a plan to move to reusable plastic baskets with liners
in hopes of reducing waste. A.S. Catering uses reusable
china dishes and flatware, or biodegradable dishes and flatware. They
will also cater events with local, organically grown foods when requested.
Organic Food Conference
The Annual Organic Farming and Food Conference highlights local food production and trends, presentations by farmers and ranchers regarding production challenges, marketing opportunities, and the benefits to consumers by supporting local farms, and includes a slow food dinner.
